Kimsan Pol’s kitchen
Chef Kimsan Pol leads the menu, after Embassy in Siem Reap. The set menu changes each month, with produce from the provinces. The à la carte lists soups, main courses, vegetarian options and desserts, in a current reading of Khmer classics. The site also names Petrossian caviar among the products, and a list of wines, champagne, teas, coffee and cocktails. The room was designed by architect Kimseng Ouk, with an installation by artist Sothea Thang in golden silk.
